MANGO TI PUNCH

Saint Lucia is literally dripping with mangos, having over thirty varieties of mangoes of magnificent colors and flavors. Mango Ti Punch is short for Petit Punch which is served throughout the West Indies. Nowadays, you can find a ripe mango everywhere on the island. Mango and rum are one of the quintessential Caribbean combinations for all the right reasons: together they are lush, rich, tropical, and delicious.

MAKES 1 COCKTAIL
  • 1½ ounces Caribbean rum
  • 3 ounces fresh mango puree
  • 1 teaspoon lime juice
  • 1 teaspoon turbinado sugar
  • 2 ounces ginger ale
TO PREPARE THE COCKTAIL
Put the rum, mango puree, lime juice, and sugar in a shaker. Cover and shake quick and hard. Strain into a large tumbler filled with ice. Top with cold ginger ale and garnish with fresh mango slice.
